Veggie Sandwich

Made from fresh salad vegetables, on whole wheat bread. Most of the effort goes into baking bread and making condiments. Quick to assemble. Good high energy lunch for kids. 

PREPARATION
- Whole Wheat Bread
- Pickles
- JalapeƱo Pickles

MAIN
- 2 slices whole grain bread
- 4-8 slices cucumber
- 4-8 slices tomato
- 2-4 slices onion
- 1-2 leaves lettuce, chopped
CONDIMENTS
- 1/2 red pepper, grilled, sliced (optional)
- 1 Tbsp sweet pickle relish
- 4-8 bananna peppers or jalapeno pickles
- 1 Tbsp mustard


On bottom slide of bread, layer vegetables slices and build up to chopped greens and top with condiments. Spread mustard or other sauce on top slice of bread.
