Taquitos

Baked taquitos are new favorite. Our kids love filling and rolling these. Easy to serve hot a large number at the same time. Serve with salsa.

Makes 12 taquitos. We double to 24 taquitos.

WRAPPER
- 12 corn tortillas
FILLING
- 1 cup black beans
- 1 cup mashed potatoes


Place one spoon of filling (beans and mashed potatoes) near one end of each tortilla. Fresh tortillas roll easily. On gas stove low flame, heat refrigerated tortillas to soften 10-15s per side. Roll closed and place side by side on parchment paper lined tray. Once baked, taquitos will hold together and not unroll. In toaster oven middle racks, 450F 20-30m. Remove from oven and allow to cool.
