Every time I buy a fresh pumpkin or squash, for either Pumpkin Squares or Squash Sweet Potato Puree, I am left with pumpkin or squash seeds. Good snack for kids.
MAIN
- seeds of 1 pumpkin or squash
SPICE
- 1/4 tsp salt
Clean seeds in pot of water to remove strings. Seeds float to top. Remove into strainer and rinse. Remove from strainer. Spread on parchment paper lined baking tray. Sprinkle with salt. Dry in toaster oven 140F for 60m. Bake in oven 450F for 10-15m until lightly toasted and golden brown. Some seeds may pop like popcorn. Let cool.
