Ginger Tea

Good substitute for coffee. A little more fancy than plain ginger tea. Tea bag free. Play with spices. This is my every moring hot tea. Good cold on hot summer afternoon, served in tall glass over ice with almond milk and bit of natural sugar. I used piloncillo, which is natural Mexican brown sugar.

MAIN
- 1/4 ginger finger (sizeable piece)
- 4 cups water

SPICE
- 1 stick cinnamon
- 1 tsp cardamom pods (5-10)
- 1/2 tsp cloves (5-10)
- 1/8 tsp black pepper corns (5-10)

Warms small pot until just boiling, then remove from heat and allow tea to cool and seep 5-10m, depending on desired strength.
