Corn On The Cobb

Choose seasonal fresh corn. Kernels should be large and plump, not collapsed. Silk should be brown and sticky, not black and dry. Husk should be bright and tightly wrapped. I buy my corn fresh from the farmers market in the morning and cook the same afternoon. Kids can help clean the corn.

MAIN
- 6 ears corn
- water
SPICE
- lime
- salt

Clean and cook immediately. Remove outer leaves and clean strings. Place clean whole corn cobs in largest pot and cover with water. Use very low heat to bring water to hot, just steaming, without boiling. Cook low heat 2-3h.
